Random Breakfast Scramble

I do a lot of breakfast scrambles because they are easy, healthy, and you can add practically whatever you have on hand to make a really good breakfast. This one is a protein packed scramble that is easy and delicious!

What You Need (Serves 2):

2 tbsp olive oil
2 eggs
1 red potato,diced
1/2 chopped red onion
4 pieces of thinly sliced ham (I used lunch meat!)
1 clove chopped garlic
1/4 cup canned diced tomatos
1 tbsp finely shredded Parmesan

What To Do:

Heat about 2 tbsp olive oil on medium high heat. Add to it 1 medium sized, chopped red potato. Fry the potatoes in the oil until brown and soft.
Once potatoes are browned, chop and add the lunch meat, onion, garlic, and diced tomatoes. Stir until the onions have caramelized.
Once everything is heated through lower the heat to medium heat. Make a 'hole' in the middle of the ingredients and crack the two eggs in the center. Allow them to cook for a little bit, and then begin to scramble. Once cooked through, combine the eggs with the rest of the ingredients. Scoop all the ingredients to the middle of the pan and allow to set for about 1 minute.




Sprinkle as much cheese as you like over the top and allow to melt (about 1 minute). I used about 2 tablespoons.
Serve alongside of fresh fruit or whole grain toast and you are all set to go :)) YUMMY!
