Made this for dinner tonight and it was sooooo yummy and VERY filling. I made wayyy too much for just Jeff and I. This recipe could easily feed 4 people. Also, polenta is Gluten Free!
What You Need (This will serve 4):
1 lb of cooked Turkey Sausage cut into 1 inch pieces
1 red bell pepper
1 white onion
1/2 cup chopped fresh parsley
1 tsp lemon pepper
1/3 cup water
1 cup marinara sauce
1 package of polenta sliced into 1/2 inch slices
What To Do:
Cook the turkey sausage all the way through on medium high heat and set aside. This should take about 8 minutes.
Dice the onion and red bell pepper into slices and cook over medium high heat until soft. In the meantime, slice the polenta and heat a seperate pan on medium high heat and spray with non-stick cooking spray, place the polenta in the pan and fry about 5 minutes on each side or until browned.
Once the onion and red bell pepper are soft, slice the sausage and add it in with the vegetables. Add the water, marinara sauce, lemon pepper and parsley and bring to a boil. Turn the heat down and allow to simmer for one minute.
When the polenta is done cooking, place 3-4 pieces on a plate and top with the sausage mixture.
